Teryaki Beef Heart Jerky

A healthy snack and great place to start utilizing nose to tail philosophy

This teriyaki beef heart jerky recipe is a great way to utilize parts of a cow you wouldn’t normally.  Beef heart provides excellent nutrition such as CoQ10, B vitamins, folic acid, Selenium, Phosphorus, and Zinc.  Try this out.  The taste is great.  We think it tastes better than store bought jerky.

Ingredients:

1 Beef Heart  (approximately 3 pounds)

Marinade:
3/4cup brown sugar (use white or coconut sugar)
1tablespoon onion powder
2tablespoons organic garlic powder
1/2teaspoon Ground Black Pepper
1/2 lemon, juiced
2/3cup coconut aminos
1teaspoon fresh grated ginger
1tablespoon white vinegar
1teaspoon salt
Pinch of Crushed Red Pepper

 

Procedure:

Combine all marinade ingredients and mix well.

Trim and slice your Beef heart in jerky sized strips.  Trimming off the fat and outer membrane will yield about 1 to 2 pounds.

Put Beef Heart Strips in marinade.  Let soak for 48 hours in the fridge. Making sure all the strips are fully submerged.

Drain strips from marinade but do not rinse.

Lay strips on dehydrator trays, making sure they don’t touch.

Dehydrate at 155-160 degrees (or according to your dehydrator’s manufacturers instructions) until all pieces are dried to your personal preference.

We dehydrated for about 5 hours.
